Dragonfruit Chia Pudding

Purple Dragonfruit may be the pretttiest of all fruits. I mean it’s just so vibrant it almost pops out of existence. And because it doesn’t have the strongest of flavors, it’s really perfect for using as a food coloring. When my breakfast is purple it makes me happy! I used this in concert with a blackberry granola, which made for absurd amounts of purple that morning.

For the coconut milk, I use old coconut. You should be able to find this in health food stores. Otherwise just try to buy a healthy brand of coconut milk. Everything tastes better when you make it yourself though ­čÖé


Makes 2 large bowls of cereal worth of dragonfruit chia pudding.
