Chocolate Coconut Chia Pudding

What’s the best thing about raw food? Well if you ask me, it’s the fact that Chocolate is healthy when it’s raw and vegan. So you can eat it for breakfast, just like you were a lil’ Kim again, I mean Kid, feasting on a bowl of cocoa puffs without guilt. Pure chocolate breakfast bliss. I love to get chia seeds in my breakfast because they’re such an energizing food. Get some chocolate in the mix and you’ve got a serious kick start to the day. And coconut is just delicious in pretty much everything. So making a Chocolate Coconut Chia Pudding was a no brainer. And some gojis in the mix seemed natural, as they also match quite splendidly with chocolate and coconut.

Chocolate Coconut Chia Pudding – Ebony and Ivooorrrryy

I make my own coconut milk with old coconut, and I had some left over so I threw them, some cacao nibs, and some more goji berries on top. This dish has a nice darker chocolate flavor. I generally don’t like my chia puddings too sweet as I normally eat them for breakfast. I like the sweetness to come from fruits, though in this recipe I have used a bit of sweetener as I found it necessary to balance the bitterness of the cacao powder. If you want to omit using a sweetener, you could totally get that sweetness in the mix with a fruit. Some soaked dates would be really nice, or some DURIAN!

Berries would probably be my next choice. Especially raspberries. Using more cinnamon would also be a really effective and healthy way to get the sweetness necessary to balance that chocolate bitterness. Or maybe you like your chocolate super bitter, in which case you could simply do without the sweetener.

In any case, this delicious Chocolate Coconut Chia Pudding will not disappoint.
