Raw Pineapple Cheesecake is quickly becoming one of my favorite desserts. The tartness of pineapple just so perfectly embodies the type of flavor that I want in a cheesecake.
Though this cheesecake has a straight up pineapple flavor, it goes incredibly well with other strong flavors. I’ve got a Ginger Pineapple Cheesecake recipe that I will be including in my upcoming Recipe Book, and I recently made a Strawberry Pineapple Dream Cake that was simply mind-blowing. That one will be up on the blog soon.
I’ve had a lot of Raw “cheesecakes” that don’t really taste like how traditional cheesecakes taste. And obviously, without any dairy cheese in them, raw cheesecakes are never going to taste exactly the same. But they can taste very similar, and can boast many of the same characteristics that make a cheesecake, well, a cheesecake!
Here’s a few of these characteristics and how to get them in a raw cheesecake :
- Richness – Miso, Cashews or Macadamia Nuts, Fatty Fruits, Oils (Coconut or Cacao Butter)
- Tartness – Citrus Fruits
- Saltiness – Salt & Miso again
- Cheesiness – Nutritional Yeast. I’ve also heard that using fermented cashew cheese can work really lovelily, but I’ve never tried it. Have you? Tell us about your experience in the comments.
- Creaminess – A Vitamix! While not necessary for many recipes, to get a proper creamy cheesecake, this magical machine makes a world of a difference.
Once you’ve got all those bases covered, you can create all sorts of wonderful cheesecake recipes by adding whatever flavors you like! Like Pineapple 🙂
If you don’t have coconut milk pulp on hand when you make this recipe, you can replace it with desiccated coconut or any other nut or seed milk pulp. Or you could put nuts or seeds in. I try not to put a ton of oil in all my cheesecakes to give variety, and so the ones that don’t have so much, like this one, take longer to set. 6 hours is a safe bet to set it properly in the fridge. I prefer to set anything that can be in the fridge, as enzymes can die in the freezer, and sweetness can reduce.
