Dragonfruit Chia Pudding

Purple Dragonfruit may be the pretttiest of all fruits. I mean it’s just so vibrant it almost pops out of existence. And because it doesn’t have the strongest of flavors, it’s really perfect for using as a food coloring. When my breakfast is purple it makes me happy! I used this in concert with a blackberry granola, which made for absurd amounts of purple that morning.

For the coconut milk, I use old coconut. You should be able to find this in health food stores. Otherwise just try to buy a healthy brand of coconut milk. Everything tastes better when you make it yourself though 🙂

Dragonfruit Chia Pudding

  • 1 ½ cup Coconut Milk (3 parts Water : 1 part Old Coconut)
  • 3 tbsp Chia Seeds
  • 1 cup Chopped Dragon Fruit
  • A Pinch of Salt
  • 2 Vanilla Beans
  • 1 tsp Coconut Oil
  • 4 tsp Liquid Sweetener of Choice


  1. Soak Chia Seeds in Coconut Milk. It will take longer than they do to soak in water. Maybe 30 minutes.
  2. Add remaining ingredients and blend until smooth.
  3. Serve with Raw Granola, fresh fruit, nuts, seeds, etc.

Makes 2 large bowls of cereal worth of dragonfruit chia pudding.
