Sun Dried Tomatoes are downright delicious, don’t you agree?
If you do, then you’re probably thinking, it’s about time someone put them in a smoothie! I mean, why not, right? Well I did, and I was not the least bit disappointed in the results.
Without further ado, I present to you Jon’s Odd Sun Dried Tomato Smoothie AKA The Red Power Smoothie AKA The Scott Tenorman Smoothie (If you get that reference you’re awesome) :
The Raw Sun Dried Tomato Smoothie Recipe
½ cup of Fresh Coconut Meat
1 cup of Sun Dried Tomatoes (soaked for a few hours)
1 cup of Goji Berries (I didn’t soak these, but it wouldn’t hurt to do so)
1 cup of Red Bell Pepper
½ cup of Tomato
½ cup of Strawberries
1 ½ cup of Coconut Water
½ cup Ice Cubes (added after the rest of the ingredients are blended well)
Makes at least 2 meal replacement smoothies.

- I almost always add ice cubes or frozen fruit/veggies at the end of my smoothie concocting to give them that cold boost that makes them extra delicious and refreshing in the tropical climate of Bali. This smoothie was really thick so in the future I might add more ice cubes or coconut water.
- The Sun Dried Tomatoes I got weren’t the most pungent in flavor, so if yours are you might want to use less than a full cup of them. They were still very flavorful and the main taste in the smoothie. Which I thought was absolutely delicious. Like drinking fruity Marinara Sauce.
- Next time I’m going to go for the Super Sour Sun Dried Tomato Smoothie and add a bunch of raspberries and maybe some tamarillos to the mix. Stay tuned.
