What’s a soupie you ask? Well, it’s a combination of a soup and a smoothie. It’s basically a thick, savory smoothie with an acidity and saltiness that needs to be spooned and not drank. It’s pretty damn delicious, and, of course, it’s super healthy!
A soupie is also an incredibly esoteric and really freakin’ weird term that I discovered while googling to see if anyone else had used this word before to describe food.

Anyhow, on to the important stuff. This soupie is packed with superfoods like Bee Pollen, Ashitaba Powder and Apple Cider Vinegar. And of course, coconut. If you can’t get young coconut meat (from what I hear it’s pretty widely available worldwide though – check your local asian supermarket if you can’t find it) then you can replace with coconut milk, which will give a thinner texture. You could also replace with avocado, which would be super tasty, but also make it an ugly brown color.
If you want to keep this recipe 100% Vegan, simply replace the Bee Pollen with your favorite superfood. I’d personally go with some Red Maca Powder.
If I couldn’t get coconut meat and wanted to keep both the color and texture, I’d probably go with a combination of extra banana and cucumber.
This recipe has a unique savory and sweet flavor that can be enjoyed at any time of the day. It would be really nice with some fruit and veg chunks in it as well 🙂
