Raspberry Chocolate Freezer Fudge

I’m all about my super easy freezer fudge recipes. They’re one of the easiest and most reliable dessert recipes in my raw food repertoire. They take no time to prepare, have a delicious thick, gooooooey texture and an even tastier flavor.

You can put this recipe into silicon chocolate molds like I did to make them look pretty, or you can put them into a tupperware covered in plastic wrap and then pop out a big chunk of fudge and cut it into squares. I prefer the former option, but the latter works plenty good.

Ingredients

  • 1 cup Raspberries
  • 2/3 cup Cashews (soaked)
  • 6 tbsp Liquid Sweetener of Choice
  • 2/3 cup Cacao Powder
  • 1 tsp Lemon Juice
  • ¼ cup Chopped Watermelon
  • 3/4 tsp Cinnamon
  • A Pinch of Salt
  • 1 tbsp Lecithin
  • 2 tbsp Irish Moss Paste (2 parts soaked Irish Moss : 1 part Water)
  • 2 tbsp Melted Cacao Butter

Instructions

  1. Blend all ingredients until smooth and creamy.
  2. Pour into silicon molds and let set for 4-6 hours in freezer.
