Raw Mocha Pudding Recipe – For the Coffee Lovers out there

I wanted to post this recipe in concert with the announcement of my Western Classics Gone Raw class on July 14th. The reason for this is that the class is focused on helping people stave off cravings for the comfort foods they have indulged in for years by teaching them healthy, raw replacement recipes, and this recipe possesses similar utility. In the class I will be preparing a sandwich, a pizza, and a pie; three foods that I personally have sentimental attachment to and found difficult to give up in previous attempts to create a healthy lifestyle before I discovered the magic of raw food.

I consider myself fortunate to have never developed a coffee habit. I never liked the taste, so it was easy not to indulge in the drink that so many people rely on to wake up every morning and stay focused during class or work. However, it is frequently mentioned by my students when we discuss which foods have been tough to give up. For a lot of people, going cold turkey just simply isn’t realistic. So this is a recipe that is excellent for people slowly weening themselves off coffee. It has a small amount of cold pressed coffee in it, but a strong enough coffee taste to satisfy cravings. It’s healthy, easy and downright delicious; I love it and I don’t even like coffee!

Raw Mocha Pudding Recipe

1 cup Avocado
1/3 cup Cold Pressed Coffee
½ cup Cacao Powder
½ cup Irish Moss Paste (2 parts Irish Moss soaked overnight blended with 1 part water)
¼ cup Young Coconut Water
6 tbsp Raw Honey or Coconut Palm Nectar for a fully vegan recipe
1 Vanilla Bean
2 tbsp Coconut Oil
1/4 tsp Salt

1. Blend all ingredients except coconut oil until smooth and creamy.
2. Add coconut oil while blending until well incorporated.
3. (Optional) Let set and chill in fridge for a couple hours before serving.

Makes about 3 cups
