Raw Cilantro Green Curry with Smoky Marinated Mushrooms and Pumpkin Cauliflower Rice Recipe

Generally when it comes to making main course meals that I eat alone, I like to keep it simple; usually some form of a salad and a dressing or sauce. And reserve my more ornate efforts for when I Freesh for Friends, and of course, Desserts 😉

However, every now and again I like to get a bit more intricate with one of my solo meals. This is still a pretty simple recipe that just takes a bit more time and preparation, but it is totally worth it. It WOWs, both in aesthetics and taste. With that said, I wasn’t as impressed by the Green Leaf Plate that I bought recently when I looked at the pictures afterwards. Clean white would’ve done this beautiful food more justice.


On Second Thought, I do like my Green Leaf Plate!

This recipe could easily serve two, but I made it when I was reeeaaalllllyyyyy hungry and had the thought that this was a Real #$%!ing Vegan Man’s Dinner! So if your husband/boyfriend/son/brother ever complains that he’s not filled up by Raw or Vegan food, make him this and watch his mouth contract while his belly expands in sheer satisfaction.

Smoky Marinated Mushrooms

1 cup Buttom Mushrooms (chopped & peeled)
½ cup Chopped Red pepper
½ cup Chopped Papaya
¼ cup Onion (sliced thinly)*
1 Garlic Clove (minced)
4 tsp Tamari / Bragg’s
4 tsp Coconut Oil
2 tsp Red Wine Vinegar
2 tsp Coconut Palm Sugar
1 tsp Dark Miso
¼ tsp Liquid Smoke or Smoked Paprika Powder
a Pinch of Salt

*The intense flavor of Raw Onions is lessened by the Marination process, as well as the dehydration it will undertake, but they are still pretty serious. Omit or lessen in quantity if these bad boys worry you.


Mushrooms look Gorgeous

Pumpkin Cauliflower Rice

1 cup Chopped Pumpkin
1 cup Cauliflower Florets
1 tsp Toasted Sesame Oil**
¾ tsp Fresh Chopped Turmeric
½ tsp Salt
¼ tsp Black Pepper

**There are a number of cooked ingredients that I use in small amounts to give a powerful blast of flavor without compromising the healthiness of the recipe. Toasted Sesame Oil is one of my favorites 🙂


I was always so amazed by beautiful rice spheres as a kid…and an adult 🙂

Cilantro Green Curry

½ cup Hemp Milk (1 ½ Parts Water : 1 Part Hemp Seeds
½ cup Chopped Zucchini
½ cup Chopped Papaya
¼ cup Cilantro (Large Stems Removed) (Tightly Packed to Measure)
1 Garlic Clove
4 tsp Coconut Oil
3 tsp Curry Powder (I used one with a lot of Aniseed in it so it’s got a nice sweetness to it)
2 ½ tsp Tamari
2 tsp Onion Powder
2 tsp Coconut Palm Sugar
1 ¼ tsp Lime Juice
1 tsp Papaya Seeds
½ tsp Chili Flakes
½ tsp Turmeric Powder
a Pinch of Salt


Papaya Seeds are one of my new favorite ingredients. And they’re jam packed with enzymes!


  1. Mix Mushrooms and Onions with all Marinade Ingredients except Red Peppers and Papaya and Dehydrate in a bowl with a plate covering it entirely at 145 F for 1 hour. The plate cover is to prevent them from dehydrating – the point is just to warm them up and aid in the marination process. You could dehydrate the Red Peppers and Papaya if you want as well! I liked the contrast of warm mushrooms and onions with cold peppers and papaya.
  2. Drop the temperature to 105 F and Dehydrate for 2 more hours.
  3. Process all Pumpkin Cauliflower Rice ingredients until the size of Rice Grains.
  4. Pack into a bowl, turn upside down and pop out onto plate. To make it look real pretty 🙂
  5. Blend all Curry Ingredients until smooth. Garnish with Papaya Seeds and Cilantro Leaves.
  6. Add Red Pepper and Papaya to Marinated Mushrooms and serve with Rice and Curry.
  7. Feed to a real *&!%ing Vegan Man and watch him be fully satisfied by a Raw Vegan meal. Or split between two people for a small/medium sized meal.
