It’s a real nice simple recipe that can be made without any equipment. It’s also about a million times better with a dehydrator, as the juiciness of the tomatoes explodes in your mouth!

Raw Stuffed Tomatoes with Herb Tapenade

Raw Stuffed Tomatoes with Herb Tapenade

  • Tomatoes
  • 7 Ripe Medium Tomatoes
  • Tapenade
  • ½ cup Parsley (lightly packed to measure) (big stems removed) (minced)
  • 6 tbsp Minced Red Pepper
  • ¼ cup Mung Bean Sprouts
  • ¼ cup Shredded Carrot
  • ¼ cup Basil Leaves (tightly packed to measure) (minced)
  • 2 tbsp Minced Spring Onion
  • 2 tsp Olive Oil
  • 1 tsp Light Miso
  • 1 tsp Dried Oregano
  • 1 tsp Apple Cider Vinegar
  • ½ tsp Salt
  • ½ tsp White Pepper


  1. Cut thin slice off bottom of Tomatoes to make a flat bottom.
  2. Slice small square into top of Tomatoes and then scoop out gooey insides without puncturing bottom of Tomatoes.
  3. Prepare all Tapenade ingredients and mix in bowl.
  4. Spoon Tapenade into Tomatoes.
  5. (Optional) Dehydrate for 3 – 5 hours at 115 Fahrenheit. This makes the Tomatoes juicy and makes the dish about a million times better.
